This is a very delicious caramel I make. Goes awesome with ice cream or even roasted pork. Just be sure to refrain from stirring it until you have to or else you take a chance of it crystallizing.

Spiced Caramel
Ingredients:
1/2 cup Sugar
1/2 tbsp Corn syrup
1 1/2 tbsp Water
1/3 cup Heavy whipping cream
2 tbsp Butter
1/2 tsp Cinnamon
1/4 tsp Cloves
1/4 tsp Chili powder

Directions:

1. Combine sugar and corn syrup in a pan.
2. Cover with water.
3. Bring mixture to a boil.
4. Cover with tight fitting lid for 30 seconds to dissolve sugar crystals.
5. Reduce Heat to Medium High.
6. Cook until sugar begins to color slightly.
7. Reduce heat to medium.

Do not walk away at this point! The sugar will burn very quickly!

8. Cook to a rich golden brown.
9. Add cream and butter to stop the cooking process. The mixture will bubble violently.
10. After mixture finishes bubbling whisk until its smooth.
11. Mix spices into the caramel.

I may have to try this since I have never made carmel before.... would it be safe to assume that I could try a batch without the spices first to make regular carmel?

Yeah definitely. Just be careful.. Molten sugar is hotter than Fryer oil and sticks to the skin which is... not a good thing heh

Have to get my wife to make this. This sounds yummy.
