These days, I often find myself pressed for time in the kitchen. Get home from work, hit the gym, home by around 8:45, and need to cook dinner for myself and a hungry girlfriend :)

She has a gluten allergy and likes to eat healthy. We both exercise regularly so a combination of protein, carbs, and fat is on the menu. With bedtime right around the corner, I've got to think of something fast. This one can be whipped up in around 30 min and provide leftovers that are great the next day. Feel free to use chicken, turkey, or other meat.

Quick Beef Stew

1 lbs ground beef
1 12-14 oz can beef broth
2 med potatoes (peeling optional)
2 med carrots, peeled
1 small onion
1 tbs butter
2 tbsp corn starch
1 cup water
Any other veggies you want
salt and pepper to taste

Cut the potatoes into cubes, as large or small as you like (larger cubes will take longer to cook)
Peel and slice the carrots
Brown the ground beef, set aside.
Melt butter in a med or large sauce pan over medium heat
Add potatoes and carrots
Let cook for 5 minutes. Toss and cook another 5 minutes.
Dice the onion and add to carrots and potatoes, cook 10 minutes.
Add beef and can of beef broth and bring to a simmer.
Combine the cornstarch and water in a blender, blend thoroughly, add to pan.
Stir everything in the pan until even, reduce heat, and simmer for 10 minutes or until potatoes and carrots are tender.

With leftovers, add some water to the portion before heating to thin it out little. It will thicken back up after heated.
