I'd be more then happy to change professions based on the needs to the guild. I may need some help leveling up but a change would be nice. Maybe we don't have enough of something?

From what I've seen we have a decent mix of everything.. just go with what will help you the most

I wish I could do all professions on a single toon due to the cool BoP/self only/Prof level x required goodies they have ingame. I'd say to pick the crafts you think would benefit you most from that standpoint... although that might also mean you can't fit in a corresponding gathering skill with that toon. (You know, like herb with alch, or mining with BS, or skin/LW).

You might also want to consider gatherings skills if money is an issue with you, but more than that - some logic. A holy priest or protection warrior might have a bad time with Skinning because the creature killing is slow for them. Some classes can get to herbs or nodes and avoid/stop nearby attacking creatures better than others. A fast flying mount will save you many heartaches while gathering.

Finally, look at some of the formulas. If many are dungeon drops, or raid drops, and you don't do those... it's not a good fit. If you don't like reputation grinds, you might not want to go for professions that have recipes spread on quartermasters of many disparate factions.

I think we've got good depth in professions atm; I don't think anyone's been needing to look outside the guild for stuff unless they need something *that instant* and the right players don't happen to be online. The new system of buying most advanced formulas from Dalaran trainers, or researching random missing recipes, is working out pretty well.
