View Full Version : Wife's Tuna Cakes, MMMMm

This is for Tuna Cakes my wife makes. I love these, she loves them and doesn't like tuna. My nephew who HATES tuna loves these.

2 8oz. Cans of Tuna
1/3 Cup Mayonaise
1 Cup of Shredded carrots
1 Cup of Shredded Cheese (Buy the bag of shredded cheddar)
1 box of Cornbread Stuffing mix (DO NOT USE FLAVORED like turkey or pork)
Sweet Relish to taste...
1/3-1/2 cup of Water, depending on if you want them moist, or crunchy.
(I prefer crunchy)

Mix EVERYTHING together in a large bowl until thoroghly mixed. COver and set in fridge for 10 minutes.

Then pre-heat you frying pan over 3/4 heat. Fry either in spray or oil, depending on preference. Fry until brown to dark brown on both sides. I suggest over ooking them slightly, makes them a little crunchy and MUCH better.

To make these rather healthier then they are use below:

Tuna in Water cans
low fat Mayo
fat free shredded cheese
buy the Mount Olive or equivalent sweet relish that is made with splenda.

We make it like the healthier one and they are amazing.

Can they be made without the cheese? I'm allergic and non dairy cheese is not the same...

Yes they can. You really don't taste the cheese much with the amount that is in the recipe, what makes them is the Sweet relish, tuna, and the stuffing...they are amazing!

Total fat 17g
Saturated fat 5g

Carbohydrate 24g
Dietary fiber 1g

Vitamin A 35% DV
Vitamin C 0% DV
Calcium 15% DV
Iron 10% DV

One thing to remember is that the fat in these is a lot of "good fats." Tuuna is one of the most pure forms of protein and good fats on the planet :)

I will get the info for the "diet" version ASAP. This took me forever to set down and figure out everything.

It's a pretty significant change though when you use the "diet" version.

HA! Nam!

OK, first it's not two cakes. Basically you make them as big as you want, then divide it up into 6 servings!!! So disregard the 2 cakes thing!!!!

This is the "Diet" Version...

DO NOT get pushed away by the 11.3g of fat. This is a lot of the "good fats."

These were welcomed into the Weight Watchers program that my wife and her sister go too.

Weight Watchers Points for this version is 6 points per "serving."

Serve these with some good veggies and you have a very good, low points, satisfying, delicious meal!

Calories 273
Total fat 11.3g
Saturated fat 2g
Cholesterol 35mg
Sodium 600mg
Carbohydrate 24g
Dietary fiber 1g
Sugars 1g
Protein 19g
Vitamin A 35% DV
Vitamin C 0% DV
Calcium 15% DV
Iron 10% DV

Thanks Landro. I made the regular recipe and make 9 cakes out of it. So the Calories would be a bit lower for me.

These were awesome by the way. My mom tried them and loved them. She doesn't even like Tuna.

I wonder how to make this work with salmon or if would work the same. I swear I can't make a salmon or tuna cake come out right. Usually they end up falling apart into little shredded pieces of my mixture that either burn on the outside and are raw on the inside.

No egg, what holds this together, the mayo?

Just curious we do an annual salmon fishing trip every year, bring back a bunch of canned/jarred salmon and I end up not using or cooking it badly and feeding to the dog:)

The mayo, and the stuffing, once it's wet from the water, are what hold it together. I would say yes, the salmon would work, BUT you would have to make sure it shredded like tuna is in the cans.

I made these myself and had no issues. I can't cook oatmeal on a stove, give me a grill and that's another story, but I made these with no problems. Make them, you will love 'em....I garauntee it.

I may try it with salmon myself now.
